2 cups shredded zucchini (I use pulp only to add moisture)
½ - 1 cup chopped up Trader Joes Dark Lovers Chocoate Bar (85% chocolate)
Preheat the oven to 350 F degrees and grease an 8½ x 4½-inch loaf pan, or use two mini loaf pans. I always use two mini paper baking pans- they cook faster and you can give one away!
Place butter in a large microwave-safe mixing bowl and microwave until just melted.
Stir in the brown sugar until smooth.
Add the eggs and vanilla.
Whisk together the flour, cocoa powder, salt, baking powder, baking soda and instant coffee in a medium bowl.
Add to the butter mixture and stir until well combined.
Stir in the shredded zucchini and chocolate pieces.
Spoon the batter into the prepared loaf pan(s) and spread evenly.
Bake for 60 minutes for one pan or 30 minutes if using two small pans until a toothpick comes out clean.
