Dark Chocolate Zucchini Bread

- 1 stick unsalted butter
- 2/3 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1⅔ cups all purpose flour
- ⅓ cup Dutch-process cocoa powder
- ½ teaspoon salt
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon espresso powder
- 2 cups shredded zucchini (I use pulp only to add moisture)
- ½ - 1 cup chopped up Trader Joes Dark Lovers Chocoate Bar (85% chocolate)
- Preheat the oven to 350 F degrees and grease an 8½ x 4½-inch loaf pan, or use two mini loaf pans. I always use two mini paper baking pans- they cook faster and you can give one away!
- Place butter in a large microwave-safe mixing bowl and microwave until just melted.
- Stir in the brown sugar until smooth.
- Add the eggs and vanilla.
- Whisk together the flour, cocoa powder, salt, baking powder, baking soda and instant coffee in a medium bowl.
- Add to the butter mixture and stir until well combined.
- Stir in the shredded zucchini and chocolate pieces.
- Spoon the batter into the prepared loaf pan(s) and spread evenly.
- Bake for 60 minutes for one pan or 30 minutes if using two small pans until a toothpick comes out clean.
