1/4 to 1/2 cup each raw assorted nuts (I use raw slivered almonds, pecan pieces, and sliced almonds all from Trader Joes
1/4 cup each raw pumpkin and sunflower seeds
1/2 cup unsweetened large dried coconut flakes
1 tsp vanilla
1 tsp cinnamon
1/2 tsp Kosher salt
1/2 cup maple syrup
1/2 cup olive oil
1/2 cup assorted dried fruits (I use Trader Joes Golden Berry Blend - golden raisins, cherries, cranberries and blueberries)
Preheat oven to 325
Mix oats, nuts, seeds and coconut in large bowl.
Add maple syrup, olive oil, cinnamon and vanilla and salt.
Spread mixture on baking sheet and put in oven at 325 for 20 minutes- stir then put back in for another 8-10 minutes- check frequently and take out when coconut begins to toast a light brown color.
While still hot on baking sheet mix in dried fruits. Cool and enjoy!
