Roasted chicken (or store bought rotisserie) cut into bite sized pieces
2 tablespoons good quality olive oil
Kosher salt and freshly ground pepper
1/2 cup greek yogurt
1/4 mayonnaise
1 tablespoon curry powder
1/4 teaspoon garlic powder
3 -4 tablespoons chutney (I like Major Grey's Chutney for this)
Zest and juice from 1 lime
Dash of cayenne pepper
Splash of rose wine (optional)
1/2 cup seedless grapes, halved
2 scallions, finely sliced
Roasted, salted cashew pieces
Cilantro
Cooked Israeli couscous
Red butter leaf lettuce
Balsamic vinegar
Avocado
In a medium bowl, whisk together the greek yogurt, mayonnaise, curry powder, garlic powder, lime juice and zest, chutney, wine, cayenne pepper and olive oil . Salt and pepper to taste.
Add the chicken, celery, grapes, and scallions
Toss well, taste and adjust the seasoning, if necessary.
Chill the curried chicken salad until ready to serve.
Place red butter leaf lettuce in wide bowl and drizzle with olive oil and balsamic dressing. Place spoonful of couscous over lettuce and top with chicken salad. Top with avocado, cashews and cilantro.
